Turkey Defrost Calculator

USDA-based thawing times for the refrigerator, cold-water and microwave methods — plus a reverse planner that tells you exactly when to start.

Your turkey

Thawing times

🧊 Refrigerator (USDA recommended — safest)

—
—
Keep the fridge at or below 40°F. After thawing, the turkey stays safe in the fridge for 1–2 more days.

💧 Cold water

—
—
Keep the bird in its original wrapping, submerged in cold tap water. Cook immediately after thawing.

📡 Microwave

—
Follow your microwave manufacturer's defrost instructions for poultry size and timing, rotate the bird, and cook immediately — some areas may start cooking during microwaving.

⚠️ Food safety (USDA)

  • Danger zone: 40°F–140°F. Bacteria multiply rapidly in this range.
  • Never thaw a turkey on the kitchen counter or in hot water.
  • Do not leave a raw turkey at room temperature for more than 2 hours.
  • Cold-water and microwave-thawed turkey must be cooked immediately.
  • Cook to an internal temperature of 165°F (breast, thigh and wing).

Worked examples

  1. 15-lb turkey, refrigerator: 15 × 4.8–6.0 h/lb = 72–90 hours (3.0–3.8 days). To cook it on Thanksgiving (Nov 26, 2026), start thawing by Nov 22, 2026 (ceil(15/4) = 4 days ahead).
  2. 20-lb turkey, cold water: 20 × 30 min/lb = 600 minutes (10 hours). Change the water every 30 minutes — about 20 changes — and cook it immediately after thawing.
  3. 10-kg turkey (22.0462 lb), refrigerator: 22.0462 × 4.8–6.0 h/lb = 105.8–132.3 hours (4.4–5.5 days). To cook it on Dec 25, 2026, start thawing by Dec 19, 2026.
  4. 12-lb turkey, microwave: about 12 × 6 min/lb = 72 minutes on the defrost (30% power) setting. Check your microwave manual, rotate the bird, and cook immediately — never refreeze raw.

FAQ

How long does it take to thaw a turkey in the refrigerator?
USDA guidance is about 24 hours for every 4 to 5 pounds. A 15-pound turkey takes 72 to 90 hours (3.0 to 3.8 days); a 20-pound turkey takes 96 to 120 hours (4 to 5 days). Keep the refrigerator at or below 40 degrees F, and the thawed turkey stays safe in the fridge for 1 to 2 more days.
How long does cold water thawing take per pound?
About 30 minutes per pound of turkey, with the bird in its original wrapping submerged in cold tap water. A 20-pound turkey therefore needs 600 minutes, or 10 hours. Change the water every 30 minutes and cook the turkey immediately after thawing.
Can I thaw a turkey on the kitchen counter?
No. The USDA says never thaw a turkey on the counter. The outer layers enter the danger zone of 40 to 140 degrees F, where bacteria multiply rapidly. Do not leave a raw turkey at room temperature for more than 2 hours.
How often should I change the water when thawing in cold water?
Change the water every 30 minutes so it stays cold and safe. A 20-pound turkey needs about 20 water changes over its 10-hour thaw. Set a timer so you do not forget, and cook the turkey immediately once thawed.
Can I refreeze a thawed turkey?
A turkey thawed in the refrigerator can be refrozen without cooking first. A turkey thawed by the cold water or microwave method must be cooked before it can be refrozen safely.
What internal temperature must turkey reach when cooked?
Turkey is safe to eat once it reaches an internal temperature of 165 degrees F (about 74 degrees C). Check with a food thermometer in three places: the thickest part of the breast, the innermost part of the thigh, and the innermost part of the wing, even if the bird has a pop-up timer.
Is it safe to cook a turkey from frozen?
Yes, it is safe to cook a turkey from its frozen state, but it will take at least 50 percent longer than a fully thawed bird. Do not try to speed it up by thawing it on the counter first.
When should I start thawing a turkey for Thanksgiving?
Work backwards from your cook date using the refrigerator rule of 24 hours per 4 to 5 pounds. For a 20-pound turkey cooked on Thanksgiving (November 26, 2026), start fridge thawing by November 21, 2026. Use the reverse planner above for your exact weight and date.
