What this planner covers (and what it doesn't)
This is a full Thanksgiving dinner planner: guest count → turkey size in pounds, thaw time, roast time, side-dish quantities, a countdown cooking timeline from your serve time, and a leftover estimator — one integrated plan. Think of it as a thanksgiving menu planner, not a single-number tool.
- Thawing deep-dive? Go to the Turkey Defrost Calculator — fridge, cold-water and microwave methods with a reverse start-date planner and a full USDA food-safety panel.
- Sizing the bird itself? Go to the Turkey Size Calculator — whole vs. bone-in breast vs. boneless, fry and smoke times, and the verbatim USDA roast chart.
The three tools link to each other and do not duplicate: this page plans the dinner; the other two go deep on the turkey.

The turkey is done at 165°F internal temperature — the clock is a guide, the thermometer is the proof.
Worked example: Thanksgiving for 12
The scenario
12 adults, normal appetites, some leftovers wanted, serving at 4:00 PM, stuffing cooked separately.
The plan (computed by the planner)
- Buy a 15 lb turkey (12 guests × 1 lb × 1.25 leftovers, rounded up).
- Thaw: 90 h 00 min (3.75 days) in the fridge — start 4 full days before serving; or 7 h 30 min in cold water (15 water changes).
- Roast unstuffed at 325°F: 3 h 53 min to 4 h 15 min; done at 165°F on a thermometer.
- Sides for 12: 9 cups stuffing, 9 cups mashed potatoes (4 lb raw), 4.8 cups cranberry sauce, 3 lb vegetables, 4 cups gravy, 18 rolls, 2 pies.
- Timeline: preheat at 10:30 AM · turkey in at 11:15 AM · start temp checks 11:37 AM · out to rest 3:30 PM · carve 3:50 PM · serve 4:00 PM.
- Leftovers: about 3 lb raw-equivalent → 1.65 lb cooked ≈ 6.6 cups shredded ≈ 13 sandwiches.
How the planner does the math
Turkey size: 1 lb per person
USDA guidance is about 1 lb of whole turkey per adult — bone-in birds lose a lot of weight to bone and shrinkage. Kids under 10 count as half a serving. Appetite multiplies that base (light ×0.85, big ×1.25) and your leftover goal multiplies it again (some ×1.25, a week ×1.5). The planner rounds up to the next whole pound because that's the bird you actually buy.
Thaw: 24 hours per 4 lb
USDA says allow about 24 hours of fridge thawing per 4–5 lb. The planner uses the conservative 4-lb figure, then rounds up to whole days — thawing a day early is harmless (a thawed turkey keeps 1–2 more days in the fridge), thawing a day late is a disaster. Cold-water thawing is 30 minutes per lb with the water changed every 30 minutes, and the bird must be cooked immediately after.
Timeline: plan on the high end
The roast chart gives a range (for example, a 15 lb unstuffed bird: 3 h 53 min to 4 h 15 min). The timeline schedules oven-in on the high end and starts thermometer checks at the low end. A finished turkey can rest tented in foil — an undercooked one can't be hurried without drying out. Rest 30 minutes before carving.
Sides: per-person portions
Side quantities scale linearly per guest from Food Network's Thanksgiving portion planner: ¾ cup stuffing, ¾ cup mashed potatoes (≈⅓ lb raw potatoes), ⅖ cup cranberry sauce, ¼ lb vegetables, ⅓ cup gravy, 1½ rolls per guest, and 1 pie per 7 guests.
Food safety (USDA)
- Turkey is done at 165°F — check the thickest part of the breast, the innermost thigh, and the innermost wing with a food thermometer, even if the bird has a pop-up timer.
- Stuffing cooked inside the bird must also reach 165°F in its center. USDA recommends cooking stuffing separately.
- Never thaw on the counter — the danger zone is 40°F to 140°F. Refrigerate leftovers within 2 hours; use within 3–4 days.
