Seasoning calculator
Base ratio at medium heat: 0.8 oz Cajun boil seasoning per pound of crawfish (4 oz per 5 lb), plus cayenne at one quarter of that. Uses the total from the Quantity tab, or enter pounds directly.
Boil and soak timing
Classic Louisiana rhythm: purge, rolling boil, short cook, long soak off the heat. Timing per batch for your pot size.
Worked example: 20 guests, step by step
- Quantity: 20 guests x 4 lb per person = 80 lb of live crawfish.
- Sacks: 80 / 32 lb per sack = 2.5, round up to 3 sacks. Three sacks is about 96 lb, giving a comfortable buffer.
- Batches: with a 25 lb pot, 80 / 25 = 3.2, round up to 4 batches.
- Water: 25 lb x 0.5 gal per lb = 12.5 gallons per batch, 50 gallons total. Add 2 oz salt per gallon, so 25 oz per batch.
- Seasoning (medium): 80 lb x 0.8 oz = 64 oz (4 lb) Cajun boil seasoning. Cayenne: 80 x 0.2 = 16 oz (1 lb).
- Aromatics: 80 / 5 = 16 lemons, 80 / 10 = 8 heads of garlic and 8 onions.
- Sides: 20 x 2 = 40 ears of corn, 20 x 0.5 = 10 lb potatoes, 20 x 0.25 = 5 lb smoked sausage.
- Timing per batch: purge 25 min once, return to boil about 6.75 min, boil 4 min, soak 20 min off heat. About 31 minutes per batch.
- Tail meat yield: 80 / 6 = about 13.33 lb of tail meat for leftovers and recipes.

Frequently asked questions
1 How many pounds of crawfish per person?
Plan 3 to 5 pounds of live crawfish per person for a main-course boil. Use 2 to 3 pounds if the boil is an appetizer or you serve plenty of sides like corn, potatoes, and sausage. For serious eaters or an all-day event, budget 5 to 7 pounds per person. It is always better to have a little extra than to run out.
2 How many pounds are in a sack of crawfish?
A standard sack of live crawfish holds 30 to 35 pounds. Some regions sell larger sacks of 35 to 40 pounds. This calculator uses 32 pounds per sack as the default, and you can adjust it. Always confirm the sack weight with your supplier before you order.
3 How much seasoning do I need per pound of crawfish?
At medium heat, use 0.8 ounces of Cajun boil seasoning per pound of crawfish, which is 4 ounces per 5 pounds or about 25.6 ounces per 32-pound sack. Add cayenne pepper at one quarter of the Cajun amount, or 0.2 ounces per pound. Scale both with the heat preset: mild uses 0.6 times, hot 1.5 times, and extra hot 2 times the medium amount.
4 How long do you boil crawfish?
Once the water returns to a rolling boil after adding the crawfish, cook 3 to 5 minutes. Four minutes is the standard. Then turn off the heat and let the crawfish soak. Longer boiling makes the meat tough, so most of the flavor comes from the soak, not the boil.
5 How long should crawfish soak after boiling?
Soak 15 to 30 minutes off the heat, with 20 minutes as the default. Taste one every 5 to 10 minutes during the soak and pull the batch when the spice level is right for you. Soaking longer than 30 minutes can make the crawfish mushy.
6 Do I need to purge crawfish before boiling?
Rinse live crawfish thoroughly in fresh water to remove mud and debris. An optional salt-water purge of 20 to 30 minutes, using one quarter cup of salt per gallon of water, is traditional but many Louisiana cooks now consider rinsing alone sufficient. Never submerge live crawfish in standing water for long, since they can suffocate.
7 How much water do I need for a crawfish boil?
Use about 0.5 gallon of water per pound of crawfish per batch, which is 2 quarts per pound. A 25-pound batch needs about 12.5 gallons of water, so choose a pot with headroom above that. Add 2 ounces of salt per gallon of boil water.
8 How much tail meat does 3 pounds of crawfish yield?
About half a pound. Only the tail meat is typically eaten, roughly one sixth of the whole weight, so 6 pounds of live crawfish yields about 1 pound of tail meat. This calculator shows the estimated tail-meat yield for your total so you can plan leftovers.
9 Can you boil frozen crawfish?
Yes, if they are pre-cooked. Thaw them first, then reheat 2 to 3 minutes in seasoned simmering water so they absorb flavor. Do not boil pre-cooked frozen crawfish for a long time or they turn rubbery. Raw frozen crawfish can be boiled like fresh, adding a few extra minutes to return to a boil.
10 How do you reheat leftover crawfish boil?
Steam or simmer leftovers 3 to 5 minutes until heated through. Refrigerate leftovers within 2 hours and use within 3 days. Peeled leftover tails are excellent the next day in etouffee, pasta, or omelets.
11 What does a straight tail on a cooked crawfish mean?
A crawfish with a straight tail after cooking was often dead before it went into the pot, and it may not be safe to eat. Discard straight-tailed crawfish. Live crawfish curl their tails when they hit the boiling water.
12 What sides go in a crawfish boil and how much per person?
Classic add-ins are corn on the cob, small red potatoes, smoked sausage, mushrooms, onions, garlic, and lemons. A good rule is 2 ears of corn, half a pound of potatoes, and a quarter pound of smoked sausage per person. Boil the potatoes 8 to 10 minutes and the corn about 10 minutes before the crawfish go in.
13 How do I season a second batch with the same water?
The water stays seasoned, so for each additional sack add roughly half the original seasoning amount, then taste the water before the crawfish go in. Top up salt and cayenne to taste. If the water gets murky or over-salted after several batches, start fresh.
